Inside Out: Sir David Tang

He lives between Hong Kong and Belgravia with his wife, Lucy. He has two children from his first marriage: Victoria, 23 and Edward, 22. He's launching an internet retail company aimed at young people in China.

'I love living in SW1, especially being close to Baker and Spice'. Apart from Cuban cigars, David's main indulgence is 'huge linen napkins from Chateau de Bagnols in France. No matter when or where you eat, it is important always to have a proper napkin.' Other treats include 'smoked salmon from Bellamy's on Bruton Mews. I always take it back to Hong Kong with me.'

His signature dish is 'fried eggs, sunny-side up, with frazzled edges' and he hates Marmite, anchovies and cheese. He loves travelling but advises 'avoid airport crowds - go private.' His favourite hotels are the Amanjiwo in Yogyakarta, Indonesia and the Villa Feltrinelli on Lake Garda.

Who's on the sofa?
My wife Lucy and our four dogs: Hot, Cold, Chilli and Hemington.
What would you eat?
Crab in Chinese yellow wine sauce and steamed garoupa (a fish) with spring onions.
What's for pudding?
Bird's nest in coconut milk, as served at Imperial banquets.
And to drink?
Perrier with ice in a silver cup.

Which are your favourite restaurants?
Ka Jok See in Phuket is the tiniest, shabbiest, oldest restaurant in the worst city in Thailand. It looks like it might crumble to the ground at any moment and it seats about 40 people, but it serves the best Thai food. The owner puts bunches of fresh roses all over the walls. It's an exceptional place.

I love the grandeur of Kronenhalle in Zurich. It has so much history, everyone should go at least once for the veal. Victoria City Seafood in Hong Kong is disgustingly decorated but serves incredible Cantonese food. Try the lettuce with shrimp paste.

I like Mark's Club in Mayfair. It has impeccable service. Bruno, the maître d' has been there for 40 years and looks after you like he's your nanny. Finally, Yacout in Marrakech because it has wonderful food, service and atmosphere. The private room is the most romantic place. If you can't seduce a girl in that room you may as well give up.
