The body of grandmother Gloria Burgos, 50, was discovered by a delivery driver on Monday night.
Locals said a Polish chef, apparently sacked six weeks ago for smoking drugs during his break, was spotted near the scene hours earlier.
Mrs Burgos, who moved to London from Colombia 35 years ago to give her three children a better life, had run Goode Foods in Bermondsey Street, near London Bridge, for 17 years. Locals said the corner caféwas an institution and that Mrs Burgoswas greatly loved.
Floral tributes at the scene included a bouquet from shoe designer Kurt Geiger, whose head office is a few doors away and who spoke of his sadness.
Mrs Burgos's daughter Eliza, who used to work with her in the café, and her sons Richard and Diego, who went to local Catholic schools, wrote: "We will love you forever, you will always be in our hearts so it will feel like you never left us. We never got to thank you for your advice, your encouragement and even your discipline."
Family friend Gilma Guevara, 49, said: "She was a wonderful sister, mother and grandmother who loved cooking and making people happy."
Police have arrested a 22-year-old man on suspicion of murder.
