The London Fire Brigade said the man was taken to the Royal London Hospital. A spokesman said his condition had been stable throughout the rescue but was not able to comment further about his injuries.
The man was trapped when the top two storeys of the structure in Dean Farrar Street, a few hundred yards from New Scotland Yard, fell on to the third floor. Rescuers had to ensure the building was safe and secure before the man, who is thought to be from Romania, could be freed.
Stunned office workers described how the building, which had been undergoing renovation work, appeared to implode on Tuesday afternoon, scattering rubble and masonry across the road.
One person was taken to hospital suffering minor injuries and people were evacuated from nearby buildings and roads.
Forty-three guests staying in a nearby hotel had to go into alternative accommodation amid structural fears.
Police moved quickly to reassure the public there was no evidence of an explosion at the scene, which is close to the Houses of Parliament.
