Lucy Yates, 20, is in a critical but stable condition in a hospital in Southampton after being knifed at the Somerfield store in Anchor Springs, Littlehampton, West Sussex, just before 4.30pm on Tuesday.
Samuel Reid-Wentworth, 21, was remanded in custody at Worthing Magistrates' Court after being charged by detectives from Sussex Police with attempted murder.
Reid-Wentworth, of Longford Road, Bognor Regis, was remanded in custody to appear at Lewes Crown Court on September 29. No application for bail was made during the brief hearing.
Wearing a blue sweatshirt Reid-Wentworth spoke only to confirm his name, date of birth and address.
Peter Lytle, for the Crown, said Reid-Wentworth is alleged to have carried out the attack "by stabbing the victim approximately 17 times". He added: "He is a man, who the police tell me, has a history of being diagnosed as a schizophrenic."
Earlier, Sussex Partnership NHS Foundation Trust confirmed that Reid-Wentworth had been under its care.
The trust provides specialist mental health, learning disability and substance misuse services for Sussex.
In a statement, the trust said: "Sussex Partnership NHS Foundation Trust was very shocked to hear of this terrible incident and our thoughts are with the young victim and her family.
"We can confirm that the person who has been arrested is known to our services. However, we are unable to comment any further at this stage because there is an active police investigation under way."
