Stuart Feltham, 20, from Swindon, Wiltshire, was due to give evidence in a court on the island of Crete against 26-year-old student Marina Fanouraki.
But according to reports, he caught a flight home over the weekend after being released from hospital where he was treated for second degree burns.
Fanouraki is accused of assault by throwing alcoholic drink Sambuca over Mr Feltham and setting it alight.
She was charged last week after turning herself in to police in Malia, Crete.
A court hearing last week heard she poured the drink over Mr Feltham after he made inappropriate advances - but she denied setting fire to him.
The story has made national headlines in Greece, where some have hailed the woman as a heroine. Rowdy British holidaymakers have earned themselves a bad reputation with many locals on the island because of drunken behaviour.
Mr Feltham's parents have insisted that reports their son had been sexually harassing the woman were "absolute nonsense".
Ian Feltham, 48, said his son was approached out of the blue by a complete stranger who threw accelerant over him. He said it was a case of being in the wrong place at the wrong time.
Mr Feltham, who still lives with his parents, was coming to the end of a two-week holiday with five friends when the incident happened.
