First it was calorie-laden cupcakes. Now, it appears, Victoria Beckham has developed an appetite for an even more fattening treat – cheese enchiladas.
Victoria, 34, whose skeletal frame has often been attributed to a meagre diet of seaweed shakes and edamame beans, is said to have fallen under the spell of the fat-laden Tex-Mex speciality after dinner at close friend Eva Longoria’s house.
A source said: ‘Eva is Victoria’s closest friend in Los Angeles and she and David have been round to Eva’s for dinner on many occasions.

‘Eva is proud of her Mexican heritage and considers herself an excellent cook. Victoria is a vegetarian and she flipped out over Eva’s cheese enchiladas. They are made with home-made corn tortillas and are very tasty, but hardly low-calorie.’
The source said Posh Spice asked for the cheese enchilada recipe from the 32-year-old Desperate Housewives’ star when the two were in New York together for the Council of Fashion Designers of America Awards last week. Eva has her own Tex-Mex restaurant in Hollywood, called Beso, meaning ‘Kiss’.
The friend of Eva’s said: ‘Victoria said David had been going on about the enchiladas and she asked Eva for the recipe. It may not be obvious, but Victoria loves cooking. She wanted to make them for her boys.’
Enchiladas – the name literally means ‘in chilli’ – are a traditional Mexican dish typically made with tortillas wrapped around cheese or meat, layered with a spicy chilli tomato or meat-based sauce. In the Mexican version, hot red or green chillies are used, but Eva’s version is less spicy.

The friend said: ‘Eva serves them with rice and refried beans. Each serving is two enchiladas and she told me she was amazed because Victoria always eats at least one.’
Posh is thought to have changed her diet because she is anxious to become pregnant with the daughter she and David long for. She has been advised to put on weight if she wants to get pregnant.
Last month, The Mail on Sunday revealed how supermodel Heidi Klum gave Victoria a year’s supply of her favourite cupcakes for her 34th birthday. Victoria is now said to be eating one cupcake a day.
But while her favourite chocolate cupcake topped with icing and sprinkles contains a relatively modest 320 calories, each portion of two enchiladas is a whopping 1,180 calories. Even if Posh eats just one enchilada, that is three-quarters of the 800 calories a day that she would allow herself at the height of her dieting.
Her bizarre diet has long been the source of fascination. In the run-up to the Spice Girls world tour, she reportedly restricted her food intake to edamame beans, seaweed protein shakes and strawberries.
‘Victoria has been a lot less fastidious about her weight recently,’ a friend said. ‘She and David are desperate to conceive and she knows she needs to put on a bit of weight in order to do so. She’s bumping up on the calories.’
HOW TO MAKE THEM
In her recipe for cheese enchiladas, Eva starts by dipping corn tortillas in hot lard to soften them.
Each tortilla is then spread with a mixture of grated Monterey Jack cheese – a type of cheddar – and cream cheese before being rolled up.
The filled tortillas are then placed end-to-end in a flat casserole dish and topped with a mildly spiced tomato sauce (as opposed to the spicy version used in Mexico) laced with chopped onions and olives.
A thick layer of extra cheese is placed on top.
The dish is completed with a hefty dollop of sour cream and garnished with fresh coriander leaves.
Served with rice and refried beans.
