An early penalty from Ronan O'Gara gave Ireland the lead, before Sitiveni Sivivatu and Paddy Wallace exchanged tries and Dan Carter kicked a penalty.
O'Gara restored Ireland's lead in the second period with his boot, but two Carter penalties and a Ma'a Nonu try sealed it for the All Blacks.
Ireland captain Brian O'Driscoll admitted afterwards that the cold, wet conditions were as harsh as he has experienced in his nine years of international rugby.
"I don't know if I've played in much colder than that," he told Sky Sports 1.
"It was a difficult game of rugby and we were better off not having the ball at times. We were in it for 60 minutes but we couldn't hold on."
