The 30-year-old damaged his anterior cruciate ligament in his side's 28-20 victory over Celtic Crusaders in Bridgend 10 days ago.
"This is a blow for us and Todd," said coach Richard Agar. "He is a player we are going to miss because he has made a big contribution during the time he has been at the club."
Agar added: "He is such a versatile player and so enthusiastic. Our thoughts are with Todd and we all hope he makes a full and speedy recovery."
The former Sydney Roosters and New Zealand Warriors player has made 24 appearances for Hull, including last season's Challenge Cup final.
With Motu Tony yet to play this season due to injury, Craig Hall was the club's third-choice full-back in last weekend's win over Catalans Dragons and he is set to keep the role for Friday's visit to Huddersfield.
