The British number two was second best from the moment he blew a 40-0 lead in the fifth game of the match, going down 6-4 6-3 6-2 to the Latvian world number 84.
It is yet another setback for the 32-year-old, who has won only once on tour in an injury-hit season and has not tasted success on clay since this stage of the same event last year.
Gulbis was making his Grand Slam debut and dominated from the start, winning the first set 6-4 with his powerful serve leaving Henman perplexed.
And things got no better for Henman, as the 18-year-old won the second set 6-3 before taking the third set 6-2.
Henman admitted afterwards it had been a "totally frustrating" day.
He said: "I give my opponent credit, I think he played well. Hitting the ball as well as I have in the last five or six days and then get nothing go for me in the match...it doesn't sit well with me. But there's only one way to approach it and that's to keep working hard."
Henman insists his form in practice is excellent, but said: "You've got to take a performance like that from the practise court to the match court."
However, the 32-year-old Henman has no plans to throw in the towel.
He added: "I know that I'm nearer the end than I am at the beginning of my career. There are two options. Either you say 'I don't want to do this anymore' and you throw in the towel. I feel like that would be quitting. I feel like I've got some good tennis still in me. But I've got to do better than this."
