The much anticipated all-Serbian encounter lived up to its billing as the spectators on Philippe Chatrier Court were treated to a thriller, the match ebbing and flowing before the number two seed prevailed with a 6-4 3-6 6-4 victory.
Ivanovic's victory over the third-seeded Jankovic means she is guaranteed to be the new world number one when the latest WTA rankings are released on Monday.
Ivanovic quickly found herself 0-3 down in the opening set but recovered to win the next two games, her forehand starting to function superbly.
Jankovic unlocked her compatriot's service in the next game to restore the break advantage in her favour, her famed defensive prowess on clay cancelling out Ivanovic's aggressive shot-making.
But the 20-year-old Ivanovic was by now starting to find the forehand winners - 22 in all from the baseline by the end of the match - although it was two Jankovic errors that saw her break back again, first firing wide and then long.
Ivanovic held to love in the next to confirm the turnaround, and after breaking in the next game she held in the 10th to move a set ahead.
Ivanovic posted her fourth break of the match at the start of the second set to extend her winning streak to five games, this time the breakthrough coming as Ivanovic got the better of her compatriot in an epic 26-stoke rally.
Earlier, Safina booked her place in her first ever grand slam final with a 6-3 6-2 victory over the off-key Svetlana Kuznetsova.
The Russian had to fight back from a set and 2-5 down in each of her last two matches to eliminate top seed Maria Sharapova in the last 16 and Elena Dementieva in the quarter-finals, and the straightforward manner of this latest win will be welcome ahead of Saturday's final.
