The 30-year-old made the comments while on duty for Luis Felipe Scolari's side at the European Championships, and confirmed he would seek talks with the Stamford Bridge club upon his return, but his relationship with Mourinho - also his coach at Porto - could mean a move to Inter Milan is on the cards.
"I have heard a few comments (about a move to Inter)," he said. "It's a club matter and I am focused on playing for the national team so we will see after. But I would love to be coached by Mourinho again. The majority of the trophies I have won were won with Mourinho."
He added: "At Chelsea, there is a new cycle happening so we will see what happens. I have a contract with Chelsea.
"But you never know - sometimes a challenge is good for a player. I will speak with Peter Kenyon after the tournament."
Carvalho's national boss Scolari could be the man charged with changing the player's mind after he increased speculation that he would be the man to replace Avram Grant.
Scolari, whose contract with Portugal expires at the end of the tournament, is one of the favourites to take the Blues job and on Tuesday revealed he was interested in a change of environment.
"For the atmosphere, for the love of Portugal, it will be difficult to leave, but I'm a professional and I have lived everywhere in the world," he told the Daily Mail. I am ready to live in a different country.
"I have a contract with the Portuguese Federation and I will fulfil that. Afterwards, we will see what happens."
