The 30-year-old prop, who has been named international forward of the year for the past two seasons, had two years left on the four-year deal he signed when he moved from Bradford in 2005.
However, he has now pledged his future to Leeds until at least the end of the 2010 season when he will be approaching his 33rd birthday.
The news comes as a timely boost for the Rhinos as they prepare to launch the defence of their title against Hull KR at Headingley on Saturday.
"I am over the moon to have agreed the new deal," said Peacock.
"We have been speaking over the past couple of months and it is great to have finally come to an agreement before the start of the season.
"The contract will see me to a point in my career when I can make a decision about how I will finish my career. This gives me stability going forward so I can just concentrate on my game.
"Last year was everything I hoped it would be as a Leeds player. Winning a Super League trophy was fantastic and, with the players and coach we have at the moment, I want to be part of that future.
"What is particularly exciting is looking around our dressing room and seeing the current British talent we have and the emerging young players coming through.
"For me it is not just about playing for Leeds, it is about winning for Leeds and I want be part of that future."
