A goal from Lee Williamson gave Malky Mackay his first win in caretaker charge of the Hornets as he saw his side claim a 1-0 win at the Liberty Stadium.
And the Rams beat Leeds 2-1 to claim a place in the last-eight for the first time since 1990 as goals from Emanuel Villa and Nathan Ellington put them in control inside 20 minutes before Luciano Becchio got one back for the Yorkshiremen.
Villa followed up his hat-trick in the previous round against Brighton by opening the scoring after six minutes, out-muscling Lubomir Michalik on the right before steering the ball wide of goalkeeper Casper Ankergren into the far corner.
Ellington then made it 2-0, slotting home into an empty net for his fifth goal in this season's competition.
Becchio halved Leeds' deficit just before the break with a bullet header.
The League One side put their Championship hosts under some severe pressure in the second half but Derby held on for a quarter-final berth.
In south Wales Watford claimed a deserved win as the hosts failed to provide any real punch.
Their early pressure paid off when Tamas Priskin linked up well with Tommy Smith in attack and Williamson burst through from midfield to finish from 12 yards out with a right-foot finish.
A leveller almost arrived from the boot of substitute Jordi Gomez, who saw his late free-kick come back off the inside of a post but roll safe, much to the agony of the home faithful.
